It's easy when you know how.

Rather than just sitting someone down in a chair (or standing them up) there are ways of making your photos stand out from the 'happy snap'. (Nothing wrong with happy snaps mind), but for special occasions like birthdays, anniversaries and so on, it's often better to think about how you want to the subject to pose.
